| Rhubarb Muffins
| |
| | 1/4 cup butter
|
| 1 1/2 cup sugar
| |
| | In a large bowl, beat together the sugar,

| 1 egg

| | flour, and eggs. Add the vanilla and sour
|
| 1/2 cup oil
| |
| | cream into the mixture. Put the rhubarb
|
| 2 teaspoons vanilla

| | in and mix until thoroughly blended

| | pan. In a medium bowl, mix the rhubarb
