Old Fashion Salad Recipes: Molded Egg Salad and Vinegar Vegetable Salad, Both Diabetic Friendly

Looking for a different idea for a luncheon salad or aChill.  When ready to serve, place tomato slices on a
salad to take to a pitch-in at work or church?  Givebed of salad greens.  Using a small ice cream scoop,
this old-fashion Molded Egg Salad a try.  Served on aplace a scoop of the egg mixture in the center of
bed of lettuce leaves with or without red ripe tomatoeach tomato slice.  Sprinkle with paprika.  Garnish
slices, it is a colorful and tasty choice.  Serve withwith celery curls, if desired.  Serves 6.

meal.  This Vinegar Vegetable Salad is also good for2 tomatoes, cubed
pitch-ins as well as your own family dining table.  This1 cucumber, thinly sliced

MOLDED EGG SALAD1 cup vinegar
8 hard-boiled eggs, coarsely chopped2 cups water
1 cup minced celery1/2 cup sugar (or Splenda for diabetics)
1/4 cup salad dressing or mayonnaiseCombine vinegar, water, and sugar in a small
1 tsp Worcestershire saucesaucepan.  Bring the mixture to a boil; remove from
1 tbsp lemon juicethe heat and allow to cool.  Toss tomatoes,
1 tbsp finely minced onionsalt and pepper to tastecucumber, onion, and green beans together.  Pour the
